J.W. Chapman
The Spirit Behind the House
This is the world that J.W. Chapman helped create — a world of curiosity, celebration and refined hospitality. Born out of the Victorian era’s appetite for discovery and splendour, Mr Chapman was the original builder and proprietor of the grand country house that would become the Somerville Hotel, commanding the hill above St Aubin’s harbour from 1881 to 1934.
In truth, we know little about J.W. Chapman, but from brochures dating as far back as the late 1800s Chapman’s love of fine food, fine wine and fine company as well as the lavish gatherings he hosted were clear. His refined palate and expensive tastes drove him to import the best libations and curiosities the world could offer, welcoming guests from near and far to feast, toast and swap stories long into the night.
More than just a proprietor, Chapman set the tone for what the property would become: a place of warm hospitality, worldly spirit and joyful conviviality. Today, Voyager Lounge Bar and Tides Restaurant pay homage to his love of travel, celebration and spirited gatherings — carrying forward his legacy in every cocktail poured and every meal shared beneath those historic beams.
